Cana de Oveja is a young cheese, aged for about 3 weeks before going out to market, but the flavor becomes more intense as it ages. The flavor is buttery and tangy, with notes of lemon and savory notes characteristic of sheep’s milk. Perfect to pair with a sparkling wine.
