Tapioca is a type of starch derived from cassava root. It is almost entirely composed of carbohydrates and contains very little protein, fiber, or other nutrients. Tapioca is a starch derived from the root of the plant Manihot esculenta. The formal name is Manihot esculenta, but you may know it as cassava, yuca, or even the tapioca plant.
