The Ultimate Cuvée is an estate grown proprietary blend of Dave's favorite barrels, which varies from vintage to vintage. It is typically a big, bold and full-bodied wine, blended for complexity and the unique characteristics of the grape varieties which make up each particular vintage. Beginning with the 2024 vintage, The Ultimate Cuvee will be a "Super Tuscan" blend of Sangiovese, Cabernet Sauvignon and possibly Merlot or Cabernet Franc, exact percentages to be determined at time of harvest. “Super Tuscan” originated as a term used to describe red wines from Tuscany that defy traditional regional winemaking rules.
