Preheat your oven to 325F. Mix all dry ingredients and wet ingredients separately with a whisk or mixer before combining. Once combined, evenly distribute dough in cupcake pan (use 6 slots for *half dozen mixture).  Evenly distribute crushed pecans to each mini loaf for balanced macros. Bake for 20 minutes or until toothpick comes out clean. **Let pumpkin loaves cool for 15 minutes in pan and 10 minutes on a cooling rack before enjoying.
