We chose one with a balanced acidity level with stone fruit and juicy notes. The producers in Colombia pick the cherries from the tree, process the flesh off the cherry exposing only the coffee bean, then let the beans ferment with fresh peaches and lychee fruit for 48 hours. The peaches and lychee fruit is then washed off, but leaves behind a unique experience as the coffee has a tea-like body with notes of fresh fruit more so than a natural processed coffee.
