Jacketed between pure nickel and stainless steel outer cladding are 100 layers of folded steel forming the damascus core of this one-of-a-kind Martin Huber gyuto. Handmade in northern Austria: a single chef knife, full size and full of potential, designed to perform every cut in the kitchen.   At 235mm / 9.3", the blade is robust and tough in the rear for chopping work, slimming progressively toward an especially fine tip for slicing and detail cuts, thin behind the razor-sharp edge throughout. The house-made high-carbon damascus core stays hard and keen under kitchen demands, while the stainless outer cladding keeps attention focused where it belongs: on the cut being made, not the cleaning of the tool.   Hand sanded, etched, and polished to a silky satin finish, a close inspection of the tall convex bevels reveals beautiful alloy banding within the steel, contrasted above by the flats and tang's rough forged finish, bearing the marks of the blade's hand-hammered origins.   The handle
