The newest one-of-a-kind gyuto from his small studio in Austria's far north combines a homemade blade formula with versatile and dynamic geometry that position this knife to become the do-all workhorse of any kitchen. At 220mm / 8.6" long and 58mm tall at the heel, the blade is forged by hand from a recipe that sees O2 carbon steel outer jackets layered atop a coursing vein of 30-layer pure nickel and 02 carbon damascus, with a hard, sharp core of 1.2419 high-carbon steel at the core.
