For centuries, the most important local grape was the Tressalier. Historical records suggest that this grape flourished in Saint-Pourçain as it did nowhere else, but it has since been eclipsed by the Chardonnay grape. Denis Barbara has revived Tressalier, and it has become a signature component in his white wines. With this wine, we get raw honey, lavender, ripe apple, and apricot. But don’t be fooled- this wine is dry. A bracing acidity balances all that lovely fruit, coming through on the palate with a nice, stony, chalky minerality. Food Ideas: Pasta with a cream sauce, roasted squash, almond chicken with concord grape chutney and blue cheese. ABV: 13%
