Winemaker Fabien Castaing’s family vineyards roll along the stunningly romantic hills of Aquitaine, where rivers and tributaries segment the region on their way out to the Atlantic. The seasons of the region are perfect for viticulture, with spring rains tapering off into hot, dry summers and falls, after which the winter showers refresh and revitalize the vineyards. This blend of Merlot and Cabernet Sauvignon reminds us of a red wine from the Bordeaux AOC Clairet, a style of wine dating back to the Middle Ages that are heavier than a rosé but lighter than a red. Notes of ripe red and dark fruit meet and just a hint of spice and very soft, supple tannins. We recommend serving this wine with a substantial chill- 40 minutes to an hour in the fridge.
