Candied Fig | Dark Chocolate | Smooth Region: Planalto da Bahia Elevation: 950 MASL Varietals: Yellow & Red Catuai Process: Washed Roast: Medium The Coffee: A full, heavy bodied Washed Process Peaberry from the north of Brazil. This coffee is impeccably sorted and graded. Roasted on the light side of medium this PB is extremely smooth and sweet with notes of candied fig, raisin, dark chocolate, granola and finishes thick and syrupy. Brews great in all formats. The espresso is very approachable young and with little rest. We find it pulls a viscous shot with a nice bright pop to balance it out. Also worth noting this coffee presents more of its candied fig/raisin notes with a bit of granola when brewed in drip/pour over or in direct immersion (french press/siphon pot) formats.
