Capreolus is one of the most insane and obsessive distillers of fruit probably working anywhere in the world right now. Distiller Barney Wilczak makes these potent elixirs very much by hand in tiny batches, but what sets them apart is the wild amounts and quality of base fruit that they utilize in order to result in such powerfully concentrated, transportative spirits. This bottling, their '1000 Trees,' comes from the Prince of Wales' prize apple orchard in Hargrove with, you guessed it, 1000 trees planted, an heirloom repository of fruit in a field blend of where every tree is genetically distinct. The orchard represents an agricultural treasure, which means this special spirit does, too. It's worth the expense to experience it: high concentration, richly tropical flavor, and notes of citrus peel, stone fruit, and spice.
