Steel for a Hotter Bottom All home ovens are different. For ovens that run hot on the top, we offer the Fourneau Grande with a baking steel base. The steel base transmits heat faster and with more intensity than cordierite, to balance the "ceiling" and "deck" heat within the baking chamber. If you are accustomed to baking in an all cast-iron cloche or dutch oven, and bottom burning is never an issue, this Grande variant should work well in your oven. Note, the steel base does not include a steam-well feature like the cordierite base.
