A Rare & Exquisite Dark Chocolate Chuao cacao is among the most revered in the world, celebrated for its purity and rich, complex flavor. Nestled in the northern coastal mountains of Venezuela, the village of Chuao has cultivated its prized cacao for generations, using traditional methods of fermentation and sun-drying in historic courtyards. Chocolate enthusiasts covet its clean, nuanced flavor—a true expression of terroir and craftsmanship. At Fresco Chocolate, we were honored to receive a small shipment of authentic Chuao cacao from the 2020 harvest, a rare opportunity to work with such exceptional beans. We spent time carefully crafting a chocolate that does justice to this cacao’s heritage, experimenting with roast levels, conche profiles, and cacao percentages. After extensive testing, we found that a blended roast—combining light and medium-roasted Chuao chocolate—created an intricate balance of flavors. To further enhance depth and intensity, we incorporated a small amount
