Organic Ice Cream Bean Box

Inga edulis, also known as Ice Cream Bean, is native to many regions in South America. It’s commonly grown on coffee farms to provide shade and wind protection. Because of its fast growing nature and (surprise!) it’s a legume, it fixes nitrogen at its roots for increased soil fertility. Most notably, its white edible flesh within the pods are sweet and custard-like, making it a super fun treat to enjoy and reminiscent of ice cream—especially when you chill it!  Grown in Goleta.
