La Conserva - Guatemala / DRIP profile
La Conserva, aptly named for its resemblance to delectable fruit preserves, offers a delightful tapestry of flavors, combining luscious stone fruit notes with a velvety, indulgent undertone of chocolate. It comes as no surprise that this captivating coffee has swiftly earned its place as a favorite among our dedicated team. Hailing from the esteemed region of Huehuetenango, known as the "place of the ancients" in Guatemala, La Conserva emerges from the foothills of the majestic Sierra de los Cuchumatanes. Situated at elevations ranging between 5000 and 6000 ft, with the grand summit towering at an awe-inspiring 12,588 ft, this region boasts a distinguished reputation for cultivating exceptional coffee. The layered fruit notes found in this coffee stem from meticulous processing experiments. Allowing the coffee cherries to rest for an extended period before undergoing the pulping and washing stages and a unique submerged fermentation of 20-30 hours underwater is employed. Flavor Notes -
