The Chile Pasilla Mixe is endemic to Oaxaca, most specifically to the North East highlands of the Sierra Norte region. This rugged and rainy territory is home to the indigenous Mixes. True Pasilla Mixes must be from the northeastern highlands of the Sierra Norte, and they are a rare and prized ingredient in the culinary world because of their unique and intensely smoky, almost fruity and meaty taste. These chiles are perfect to make salsas or to add depth of flavor to any fall or winter soup. We recommend rehydrating these dry chiles before use.   To Rehydrate: Place the chiles in a saucepan filled with 2 cups of water under high heat and bring to a boil. Remove from heat, cover and allow to rest for 10 minutes.   PASILLA CHILAQUILES RECIPE
