Jerk seasoning originated in Jamaican and is widely used throughout the Caribbean. Jerk is a term used to refer to a style of cooking where meat is dry-rubbed or marinated in a spicy seasoning. Use 1 tablespoon per 1 LB of meat for a dry-rub. To create your own marinade at home, combine jerk seasoning with olive oil, lime juice.
