They include a variety of west valley coffees with the goal of producing a pleasing well balanced cup. After gathering cherry from their neighbors and friends, the folks at Badilla Herrera honey and then blend the coffees at their mill. Though they have the expertise to ferment all the way through to black honey, this year's lot was a short white honey for clarity's sake. Enjoy!
