Indeed, instead of using refined sugar (brown sugar, molasses, and powdered sugar), chef Ludivine decided to use natural sweeteners. You can find coconut sugar as a substitute for brown sugar and maple syrup as a substitute for molasses in this gingerbread cookie recipe. You can also find powdered monk fruit sweetener as a substitute for powdered sugar in the royal icing. On top of these changes, we also cut down the amount of sugar in this recipe without hurting the incredible flavors of these Christmas cookies.
