210mm Chinese Chef

210 x 100mm Chinese Chef.  This is my standard size Chinese chef, around 8" like the Western chef. I started making knives because I love this style of knife, and I couldn't find the exact one I was looking for. I wanted a thin carbon steel blade and a handle that wasn't overly large, but still acted as a counterbalance to the blade. This is a vegetable and herb dominant knife, it also excels with fish and boneless meats. Avoid using it on bones, as the edge is thin.  These are made using waterjet cut 1/16" 1084 carbon steel.
