1997 Anxi Tie Guan Yin

Upon first scent, the dry leaves exude a subtle acidity characteristic of aged Anxi oolong teas. Upon heating, sweeter notes reminiscent of dried apricot emerge. Following the initial rinse, a diverse spectrum of fragrances unfolds, encompassing wood, honey, and herbal aromas, while the sweetness evokes memories of apple compote. With subsequent brews, the wet leaves begin to reveal their floral profile. On the first infusion, the tea liquor presents a full and round mouthfeel with a lovely subtle tannic structure. The initial taste is direct with well-integrated roasting notes that give way to a profile of red fruit, notably reminiscent of raspberry jelly. We can already perceive the floral character of the tea, and it offers a slight sweetness in a beautiful length. After several infusions, a clean hint of honey forms a delightful backdrop with floral overtones, alongside an earthy nuance that lends depth. The tea envelops the palate with minimal tannins, leaving a refreshing finish.
