Napa cabbage kimchi handmade weekly in our kitchen is a staple in the Korean diet and must have with every meal.  Stage of fermentation will vary. Kimchi is made by lacto-fermentation, the same process that creates sauerkraut and traditional dill pickles. Depending on when the batch was made that week, our kimchi may be more or less sour (give us a call to the location closest to you for more info).
