Adobo is a cooking technique, therefore it's also the name of a dish.Filipino way of cooking meat or vegetables, which usually includes marinating in a mixture of vinegar, soy sauce, garlic and bay leaves helps preserve the meat in hot temperatures. This dish includes pork shoulder braised in vinegar, soy, and garlic. In my version of this dish, I include puréed and caramelized pineapple and a mix of bay leaf, peppercorn, and onion spice mix.
