Landmark Creamery Rebel Miel, beer washed sheep cheese

Landmark Creamery's Rebel Miel is a semi-firm, beer-washed sheep’s milk tomme with a complex flavor profile. Aged for 30-45 days, it’s intensely savory and mineral-forward, with notes of dried fruit and a boozy depth, sometimes reminiscent of fresh sourdough. The cheese is washed with various ales from Giant Jones Brewing, enhancing its unique, sweet, and robust character. It’s ideal as a snacking cheese with limited cooking applications, pairing well with dark beer, citrus marmalade, or fresh figs. ~ Half wheel is approximately 14-16 oz, a whole wheel 28-32 oz.
