It just so happens that the tasting notes are beautifully coordinated with a nod to wintery delights. Aromas of juniper, candy cane and cola! The sequential carbonic macerated processing from Edwin Noreña is intensive and results in an absolutely stunning and unique cup profile that has great clarity of flavor and a very “clean” finish. How is it processed? While technically a washed coffee, this is not a typical process. Cherries are harvested and soaked in water for 4 hours to clean the exterior of the fruit, sort out floaters and hydrate the fruit. The coffee fruit is then put into an anaerobic environment to undergo the initial carbonic macerated fermentation. The cherries are then removed from the tank and depulped. The mucilage-covered coffee is then submerged in water
