Smoked & Cured Beef Bacon.  Select from brisket cut (pictured below) or cut from the round (leaner option). Delicious plain, or in breakfast burritos or as a salad topping. You will want to cook this more slowly than regular bacon, or it will be extra chewy.   Pictured Serving Suggestion: Place a parchment paper on a baking sheet, cut bacon to desired size and arrange on tray.  Bake at 350*F for 20 minutes, or until reaches desired temperature/texture.
