The aging process takes 9-14 months during which time the cheese is coated with lard and a second layer of cloth... then, almost magically, pasteurized cows' milk cheese becomes one of the most beloved cheddars with a natural rind, a crumbly adored crystalline texture and a caramel-like tangy/piquant taste.
