CANDIED PEPPERED BACON ROASTED RED ONION SWISS CHEESE SAUCE SRIRACHA BOURBON GLAZEPROVOLONE, MOZZARELLATHIN CRUST  I dropped the ball on my original plan for a Turkey & Swiss pizza, and suddenly found myself with only an hour to pivot to something new. Part of my brain only activates when I go into panic mode, and that's usually also the part that comes up with the best food ideas. I rolled slab bacon in brown sugar and black pepper before I baked it onto the bacon in a bubbly glaze. Roasted red onion brings some depth, and it's natural sweet/savory vibe tie the candied bacon into the cheesy Swiss cheese sauce. The 'thriller' of this pizza is the sriracha bourbon glaze that's lightly drizzled over. It wakes the whole pizza up without overpowering any one thing. I hope you love this one. And I hope it helps you realize that bacon is not a garnish. It should get the leading role sometimes.
