Alai Cider - Cahuin (750 mL)
Alai Cider's (Chile) Cahuin is a spontaneously fermented coferment of cider and wine, made from apples and quince grown in the Valley of Cachapoal, macerated on the skins of grapes grown in the Valley of Colchagua. Made with organically grown fruit from the 2018 harvest season, this cider is holding up exceptionally. The apple trees and grape vines are between 15-70 years old, mostly grown on stony ground (orchard) and clay soils (vines) just above sea level. Apple varieties include Royal, Gala, and Marmelo; grape varieties are Semillon and Viognier; quince variety unkown. Fermented naturally with wild yeast and then aged in barrels for nearly a year. No filtering, no fining, and no added sulfites. Tasting Notes: This is an exceptional coferment, with the qualities of each fruit integrated nicely. A dry cider that would appeal to wine lovers.
