Alai Cider - The Pome King (750 mL)

Pome King from Alia Cider (Chile) is a sparkling wine made 100% from Quince. Quince grow in abundance in Chile's Cachapoal Valley. This quince-based cider is made by crushing the quince and allowing the fruit to macerate to improve flavors and yields - necessary as quince is typically very dense and notoriously difficult to work with fresh. The pulp is then pressed very slowly to obtain a concentrated and clean quince juice. Wild fermented with the indigenous yeast from the fruit. Zero / Zero - nothing added, nothing removed (no added sulfites).  This cider has profound quince aromatics. Semi-dry with low tannins and medium-plus to high acidity. Flavor notes of juicy, fresh, and tart quince plus candy lemon. Brief kick of sour on back of thought, which is washed away by a pleasant linger of fresh quince on the palate.
