Antoine Marois - Ad Astra Poire (750 mL)

Ad Astra is a Poire (French Perry) from Domaine Antoine Marois. Made from a single variety of perry pear called 'Plant de Blanc'. These pears come from Antoine's friend's orchard in nearby Domfront, an area in Northwestern France famed for it's cider and perry production, and highly regarded amongst the cider community as one of the world's finest Perry Pear growing regions.  The pears are picked by hand from very large, old trees which grow on clay and shale. Primary fermentation occurs naturally (spontaneously fermented) in stainless steel tanks. The second fermentation then occurs in bottle to form a fine bubble. These are un-disgorged, some natural sediment is in each bottle (pour slowly to avoid this hazing your drink, or get adventurous and enjoy the slurry sips!).  Tasting Notes: This perry is dry with balanced yet bold acidity and bitterness.
