Bouquetin from Domaine Antoine Marois is a cider and wine coferment. This hybrid of cider and wine is made by macerating Mondeuse pomace in the cider during the cider's fermentation. The Mondeuse grapes come from Camille and Mathieu Apffel, winemakers from Savoie in Southeastern France.  The result is an elegant, dry cider (extra-brut) cider with a great balance beween the grapes and apples. Full-bodied on the palate, with a hint of bitterness and tangy, fruity flavors (notably apple, peach and redcurrant). About Antoine Marois: Nestled on top of a hill, the Domaine overlooks the village of Cambremer located in the heart of the Pays d'Auge, in Normandy. The Estate extends over 18 hectares (~45 acres) of natural meadows including 7.5 hectares of high-stem orchard.
