This co-ferment of Apples and Quince from Durham Cider & Wine is made with a blend featuring 64% certified organic Gala and Fuji apples from Santa Barbara County, CA, 19% certified organic Newtown Pippin apples from Santa Cruz County, CA, 14% organically grown cider apples from Washington state and 3% no-spray Quince from San Luis Obispo County, CA.  Spontaneous fermentation in Stainless Steel Tank and Glass Demijohn.
