Eve's Cidery's Virginia Crab is a single varietal cider made 100% from Virginia Crab apples grown on Eve's farm in the Finger Lakes region of Upstate New York. Naturally fermented with wild yeast in neutral oak barrels. Secondary fermentation in bottle, hand disgorged for a natural sparkle in the Traditional Method (a.k.a. Method Champenoise).  The Virginia Hewes Crab is a famed American cider apple that can be a pain in the orchard, but makes for quite the lovely cider. But it's worth it!  This cider is dry, tart, and tannic with notes of grilled pineapple, rhubarb, and nice wood notes. It pours with a reach and creamy head of bubbles in your glass. A beautiful entanglement of vibrant bubbles,
