Château Peybonhomme-Les-Tours Bordeaux 2021

Château Peybonhomme-Les-Tours is a biodynamic estate located in the Blaye Côtes de Bordeaux appellation. The estate's flagship red wine is a blend of 70% Merlot, 20% Cabernet Franc, and 10% Malbec, cultivated on limestone-clay soils overlooking the Gironde estuary. The vineyards are managed organically and biodynamically, with practices such as double Guyot pruning, spontaneous winter grass cover, and soil tillage during the spring. Fermentation occurs using native yeasts in temperature-controlled concrete vats, with minimal sulfur addition (40mg/l). The wine is unfined and bottled on a fruit day of the biodynamic calendar, resulting in a wine that reflects its terroir and sustainable viticulture.
