Chèrouche Dioli-Noir is a natural red wine produced by Domaine de Chèrouche, located in Ayent, Valais, Switzerland. This cuvée is a blend of Diolinoir—a Swiss hybrid of Pinot Noir and Rouge de Diolly—and Pinot Noir. The vineyards are situated on steep slopes at elevations between 600 and 850 meters, with soils composed of schist, clay, and quartz. The grapes are hand-harvested and manually destemmed, followed by spontaneous fermentation with indigenous yeasts. Maceration lasts between 10 and 30 days, with gentle manual punch-downs to extract flavors while preserving the integrity of the berries. The wine is aged in stainless steel tanks and bottled without fining or filtration.
