Alipus San Andrés is distilled by hand by one of mezcal’s most careful and experienced distillers, Don Valente Angel, in a tiny village near Miahuatlan, south of Oaxaca City. Like others in his region, he adds some semi-wild madrecuishe to his roasting espadín, creating a beautiful complexity.
