Hiyu 2019 ‘Moon Dog’
A moderately-weighted blend of Pinot Noir and Pinot Gris with cherry, savory herbs and oak spice on the palate. Tech Variety: Pinot Noir, Pinot Gris Location: Columbia Gorge, OR Alcohol: 12% Tasting Notes The nose is an intense tour de force with aromas of cherry, raspberry, oolong tea, oak spice, and delicate earth. The palate is moderate in weight with a mix of cherry, gentle earth, savory garden herbs, and oak spice. Winemaking Grapes are hand harvested, then sealed in an open top wood vat. Whole bunch macerated and pressed off to barrel for fermentation and elevage. Kept on its skins for a full month for an intense color. Vineyard The grapes are grown on sandy loam and basalt in “an ampitheater that captures the sun beside the pond, and a cool air rising from the river.” Moon Dog is inspired by the original vintage of Hiyu wines. The 2019 is a single site co-ferment of Pinot Noir and Pinot Gris.
