Yemen coffee is traditionally grown at high elevations in harsh environments, thus the varietals are unique to Yemen. The added stress of harsh climates increases the amount of sugars and nutrients pushed to the cherries, increasing the complexity of the flavors. The name “Mocha” is often associated with chocolate and coffee. Early coffee traders classified Yemen coffee as “Mokha '' after the port city, Al Mokha, through which most Yemini coffee was exported before the 20th Century.
