5 Sentidos Guerrero Delgado Y Ancho Agave Spirit 750ml - For the first time in our short history as a brand, we have bottled a couple of expressions of mezcal in which the agaves were *not* cooked in an underground oven, but rather a diesel-powered, above-ground steam oven. A small cooperative in the village of Xochipala Guerrero created Cinco Sentidos Delgado y Ancho. Together they harvested 6 tons of wild agave “Delgado,” named for its remarkably thin leaves, and 7 tons of wild agave “Ancho,” colloquially referred to as such due to its broad-leafed “penca.”  In response to seeing trees in the region (Eduardo Neri) be chopped down but not replanted, the small, newly-formed cooperative behind these mezcales decided that a steam oven would be the more environmentally conscious method to cook their agaves.
