Unveil the rich tapestry of flavors in Cinco Sentidos Azul, a limited 500-liter batch meticulously crafted by master mezcalero Delfino Tobon Mejia in his native San Pablo, Ameyaltepec, Puebla. This exquisite offering is distilled from the Agave Tequilana Weber, commonly known as Azul, sourced from the village of Santo Tomas. Harvested in a communal effort alongside friends and family, Delfino collected around seven tons of cultivated agave Azul. This precious yield was then slow-roasted underground for three days, fueled by indigenous tehuixtle firewood, infusing each fiber with a smoky, earthy aroma. Post-roasting, the agave was allowed to ferment naturally for ten days, enriching its flavors to a sublime complexity.
