Delfino Tobón Mejía, alongside friends and family, wild-harvested these magnificent, white-striped Pizorra agaves from the pristine outskirts of San Pablo Ameyaltepec, Puebla—a town whose name beautifully translates to "the mountain where water is born." This deep connection to the land is evident in every sip. The agaves were meticulously roasted for four days in an underground conical pit oven, using tlahuicole firewood to impart a distinctive smoky character.
