  Key limes are not your typical lime! They are smaller, have more seeds, and have a much stronger smell than typical limes. Key Limes also have a thinner rind and more flavorful juice as well. Key limes, although smaller than their counterparts, produce an aroma and taste much bigger than their size. Regular limes can be used to replace Key Limes in recipes, however, the last will not be as strong and pronounced as it should be.   Simply store your key limes in the fridge for a week or two.
