It is made from a very high quality sweet wine from Banyuls, aged for 4 years in wooden rooms exposed to the sun and the weather. This maturing process results in a wine with a burnt topaz color that develops a woody and spicy nose and presents the famous "rancio" aroma (fresh walnuts and menthol) that will be found in the vinegar.
