Sweet honey, baking spice, rye spice and a pop of pepper crackle in before tart cherry. A year and a half older rye paired with the cherry here works wonders, bringing along cherry cola, Luxardo cherry syrup, sweet vanilla and a rich pop of spice. Using higher aged rye components works really well here, and preserves and amplifies the complexity, while adding more bitters nuance throughout. Long finish that's loaded with tart and juicy cherry, balancing vanilla and plenty of rye spice.
