What started as a way to use plentiful “mudbugs” eventually became the decadent, rich dish known as crawfish pie. Our version of crawfish pie incorporates an earthy roux base; the Cajun trinity of onion, bell pepper and celery; juicy Louisiana crawfish; and authentic Cajun spices – all encased in a flaky pie crust. Apple pie it ain’t – it’s a delectably rich and tasty Cajun specialty unlike any other pie in the world!
