Ahhhhhh the pork tenderloin. Always delicious - just don't overcook it! We like to brown 'em, in a skillet and then finish in the oven. A digital oven probe is your friend here. Cook to 145F and let rest for 5 - 10 minutes before slicing on the bias. Just like chops, leftovers (if there are any!) make great cold cuts for sandwiches. Slice real thin, add mustard and pickles. Or mayo and lettuce. Pasture-raised heritage breed pork from small family farms in New England. Cut by hand in Kennebunk, ME.
