Very similar to fennel and cumin seed. Ajwain seeds is also known as carom seeds, bishops weed, ajave seeds, ajvain, ajwan or Ethiopian cumin. It is highly encouraged to roast the seeds before cooking or adding to a recipe. Has a fragrant aroma similar to thyme. However, it tastes more like oregano and anise due to the bitter notes and strong flavor. Common in Desi cooking is the practice of Tadka or tempering which is a cooking method in which oil or ghee is heated until very hot, and whole spices are added and fried, creating what is called a chaunk. The oil and spice mixture is commonly added into lentil dishes or added as a garnish to a dish.
