Our third iteration with friends Closed Loop is a celebration of summer we're calling Sunset Lace, a lovely mixture of shiso, opal, hibiscus, goldenrod, and tangerine lace, all harvested from their urban cooperative farm in Back of the Yards. Totaling about a quarter acre, Closed Loop is dedicated to repurposing waste, environmental stewardship, employment equity and ethical labor practices. Blended by the farm exclusively for Spirit Tea, the pepperiness of the shiso combines with the sweet, tart notes of hibiscus, goldenrod, and tangerine lace. Sunset Lace is great for sipping iced or hot.
