Let's first talk alla norma. Pasta alla norma is probably the most famous pasta dish in Sicily. It is a glorious fried eggplant and tomato sauce situation, topped with the ricotta salata and fresh basil.  We evoke the spirit of pasta alla norma with our alla norma wild rice bowl, but with a lighter and more vegetable-centric flair. Instead of frying, we stew the eggplant in a simple San Marzano based sauce before mixing it with wild rice, blistered tomatoes, roasted garlic cloves, torn mint and basil, loads of arugula and, of course, tons of ricotta salata to tie it all together.  This dish is very special.
